Koonunga Hill Shiraz joined the range in 2002, a contemporary reflection of Penfolds multi-regional sourcing philosophy. Shiraz from the warmer districts of South Australia is carefully blended, with the Barossa Valley always well represented. Ripe plum, blueberry & sweet spice - undeniably South Australian Shiraz. The palate shows flint, liquorice, smoked meat & paprika. Integrated tannins remind us of the wine's place in the Penfolds family.

Penfolds Koonunga Hill Shiraz Cabernet is a reflection of the Penfolds winemaking style and philosophy. Sourced from premium vineyards across South Australia, the wine is known for its full-flavoured style with excellent Shiraz and Cabernet Sauvignon fruit, firm yet well-rounded structure and balanced oak. Made as a traditional 'Australian blend', the Shiraz component provides fleshy fruit flavour while Cabernet Sauvignon provides a frame of fine grained tannins. Date, boysenberry & sweet cinnamon abound. Pair with grilled meats, lamb chops or charcuterie.

A tribute to the Barossa's winemaking heritage, Pepperjack is crafted using a blend of traditional techniques and modern flair. Winemaker Richard Mattner - a born-and-bred Barossa local - loves making Pepperjack wines as much as he loves drinking them, especially alongside a great steak. As he says: "Why would I need anything else?" Deep dark red with a vibrant purple rim, the nose bursts with rich aromas of blackberry, blueberry, dark chocolate, mocha, and spice. The palate is plush and layered, delivering concentrated dark fruits, fine tannins, and a soft, lingering finish. Pepperjack Shiraz is a true Barossa classic.

The grapes were picked at between 13.5 to 14.0 Baume to produce the fruit flavours that are required to make this great wine. The grapes were fermented in a mixture of vessels to produce as much colour and flavour as possible. Portion of the wine underwent oak during fermentation and once dry, the remaining went to oak until the right balance was achieved. Careful tasting and blending, by Quarisa's winemaker, help produce this wine of style and great value for money.
