Equally important is the positive effect this technique has on the wine's depth of flavour and overall mouth feel; balance and drinkability is achieved via a fresh thread of Waihopai acidity and the long, lightly drying tannin tail.

This Pinot Gris from Marlborough's Awatere Valley displays aromas of crisp pear, juicy ripe citrus and ginger notes. On the palate this fruit-driven wine displays fresh quince, apple, and subtle hints of sweet baking spice and lemon zest. Full-bodied yet bright on the palate, this this is a fresh, bright and richly textured wine with a long and lingering finish.

This Nelson Chardonnay displays aromas of lemon zest, ripe nectarine and subtle flinty, mineral notes from use of French oak. On the palate flavours of white peach, bright citrus and notes of toasted hazelnut take this medium bodied and elegantly textured wine to a lusciously long and persistent finish.

On the palate watermelon and cranberry combine with subtle strawberries and cream. With notes of citrus and just a hint of sweetness, this finely balanced Rosé is delightfully elegant and refreshing.

Aromas of Nashi pear, stone-fruit and a gentle spice background are evident on the nose. The wine is rich, creamy and textural with great purity of fruit and balance.

Bright straw in colour, this energetic sauvignon blanc has explosive aromatics of paw paw, Kaffir lime, capsicum, and stone fruit that mingle with subtle notes of coconut and dill. Dry and reminiscent of highball gin and tonic, persistent flavours of blackcurrant, banana passionfruit, cucumber, and green olive are revealed alongside bright, mouth-watering acidity. The distinctive palate has an elegant structure and a bright, pure finish.
